salmon cakes

These are a kid friendly way of encouring fish consumption.
(you can also use tuna if you like)

1 can of salmon packaged in water (drain water)
2 to 3 eggs
1/2 cup of breadcrumbs
1/4 cup of parmesan cheese
1 teaspoon of grated lemon peel
1 squeeze of lemon juice
chopped herb (parsely, cilantro or dill work)
2 cloves of crushed garlic
salt
pepper

combine all ingredients in a bowl.
make small patties with your hands.
dip patties in breadcrumbs (both sides)
fry in sunflower or olive oil until golden brown on each side.
serve with lemon wedges or Aoili
